Raita (Indian) or TSAtsiki (Mediterranean)
Two similar recipes, the choice is yours. (You may have tried these with us at the food festivals).
Raita: Serves 4 as a side dish
8fl oz Natural yoghurt, ½ Cucumber- grated or finely chopped (squeeze to remove excess liquid), 1 Tablespoon Welsh Mint Sauce, ½ - 1 green chilli – seeded and finely chopped (optional)
Mix together all ingredients and serve chilled with any curry or as a dip with poppadums etc.
Tsatsiki: Serves 4 as a side dish
1 Cucumber – grated (squeeze to remove excess liquid), 2 cloves of Garlic, 1 Tablespoon Welsh Mint Sauce, 150ml Natural Yoghurt, season to taste.
Mix as for Raita recipe and serve chilled with crudités, Kebabs,
lamb dishes etc.
